We can’t tell you how many times, early in our pizza making careers, we went from start to finish in making a pizza only to have it come out of the oven in a multi hexagonal glob of oddness. Our first pies were the equivalent of the Charlie Brown Christmas tree. Rats!
But after countless years of making pizza, we finally have those perfectly round shapes of goodness come out of our ovens.
How?
Well, we first had to remind ourselves that perfect pizzas are necessarily perfectly round. Dough can be a finicky thing at times, and when introduced to fire, sometimes it decides to take on the imperfections of the ingredients and bake a “little wonky.”
THAT’S OK!
Ultimately, the shape of the pizza is going to be determined by the shape of the dough ball. Practice rolling your dough into dough balls with two hands on a smooth surface. A rolling pin may work well for some – but can affect the way the dough cooks and rises.
When it comes to that shape you want – practice makes perfect. This same philosophy goes for the dough recipe, proofing, stretching and even cooking.
In the end – it’s not the shape of the pizza that will bring your customers back!
