Have you ever been in the midst of making a multi-course dish and something has taken your attention away for a brief moment only to see all of your planning and timing gone awry? The next thing you know, you have some burnt food.

Well, we have some handy tips to help you alleviate that problem – which is a huge benefit when you are trying to cook multiple pizzas for multiple customers at the same time!

First, make sure you turn your pizzas quickly and frequently. You will be able to find a good rhythm and when you do – stick with it!

Keeping track of your pizzas is key as well. Make sure you make a good note of the order they were placed in the oven. Use your rhythm and turn the pizzas in that order.

A good pizza is cooked by good flame! Make sure that you are always regulating the position and intensity of your fire. A flame guard can help with that. In today’s market, you can have custom guards made with any design or even your logo. Imagine the marketing as your company’s name is seen through the fire!

Finally, remember that some degree of charring is very inviting on a pie. Not only does it provide a small crunch to the pizza, the look and smell are a desirable part of the wood-fire pizza’s charm.
